To use lemongrass in your cooking, all you have to do first is remove the outer leaf, the ones that are bruised. And then you can grate the lemongrass super finely to add it to marinades or even dipping sauces. You can also slice it and add it to stews like curries and when you slice it, it really breaks down the fiber. If you're adding it to soup stocks, just crush it and add it to the pot. Just be sure to remove the stalk before you serve the soup.
